I visited Tallahassee last year in December and had a great time kayaking on the Wakulla River, hiking the St. Mark's Trail, and visiting Wakulla Springs State Park.
I was extremely lucky to visit Wakulla Springs where we saw an aggregate of twelve manatees swimming around. It was one of the most remarkable things I've ever had the pleasure of witnessing! The water was extremely clear and the manatees seemed very happy and free. I was so excited to see them swimming and playing in the clear spring water.
Wakulla Springs State Park also had lots of trails to hike and a fascinating restaurant with lots of historical information about Tallahassee. I discovered that Tallahassee had become the capital of Florida because it was just far north enough to be out of malaria country!
Another highlight of my time in Florida's state capital, was hiking the St. Mark's Trail. There is an amazing ghost town out on the St. Mark's Trail called Port Leon. It was once a major port in the Gulf of Mexico, until a hurricane and tidal wave washed the whole town away in 1843.
